  • 1 red bell pepper, finely chopped
  • 1/4 cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup chopped water chestnuts (optional)
  • Salt and pepper, to taste

For Serving:

  • 1 head butter lettuce or romaine leaves, washed and separated

Instructions

  1. Prepare the Turkey Filling: Heat olive oil in a large skillet over medium heat. Cook ground turkey until no longer pink. Add onion and cook until softened. Stir in garlic, ginger, and red bell pepper. Sauté for 2-3 minutes. Add hoisin sauce, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Simmer for 2-3 minutes. Stir in carrots, green onions, and water chestnuts. Season with salt and pepper. Remove from heat.
  2. Assemble the Wraps: Spoon turkey mixture into lettuce leaves. Serve immediately.
