Description

Delight in the rich, buttery sweetness of classic Vanilla Pecan Pralines. These Southern American candies combine crunchy pecan halves with a smooth, caramelized sugar mixture flavored with vanilla, creating an irresistible treat perfect for gifting or enjoying any time.

Ingredients

Scale

Sugar Mixture

  • 1 1/2 cups granulated sugar
  • 3/4 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/4 teaspoon salt

Flavor & Nuts

  • 1 teaspoon vanilla extract
  • 2 cups pecan halves

Instructions

  1. Prepare the Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat to prevent the pralines from sticking once spooned onto it.
  2. Combine Ingredients: In a heavy-bottomed saucepan over medium heat, add granulated sugar, brown sugar, heavy cream, unsalted butter, and salt. Stir constantly until the butter fully melts and the mixture begins to boil.
  3. Cook to Soft-Ball Stage: Attach a candy thermometer to the saucepan. Continue cooking the mixture, stirring occasionally, until it reaches 238°F (soft-ball stage), which indicates proper caramelization for pralines.
  4. Add Vanilla and Pecans: Remove the saucepan from heat. Stir in the vanilla extract and pecan halves thoroughly. Keep stirring for 2 to 3 minutes until the mixture thickens and loses its glossy appearance, indicating readiness to shape.
  5. Form Pralines: Quickly spoon the thickened mixture into heaping tablespoons onto the prepared baking sheet. Space them apart to prevent sticking as they cool and harden.
  6. Cool and Serve: Allow the pralines to cool and harden at room temperature for about 30 minutes. Once set, they are ready to enjoy or package as gifts.

Notes

  • Work quickly when the praline mixture begins to set, as it hardens rapidly.
  • Store pralines in an airtight container at room temperature for up to one week to maintain freshness.
  • These pralines make excellent homemade gifts for holidays and special occasions.
