Instructions

- Cook to Soft-Ball Stage: Attach a candy thermometer to the saucepan. Continue cooking the mixture, stirring occasionally, until it reaches 238°F (soft-ball stage), which indicates proper caramelization for pralines.
- Add Vanilla and Pecans: Remove the saucepan from heat. Stir in the vanilla extract and pecan halves thoroughly. Keep stirring for 2 to 3 minutes until the mixture thickens and loses its glossy appearance, indicating readiness to shape.
- Form Pralines: Quickly spoon the thickened mixture into heaping tablespoons onto the prepared baking sheet. Space them apart to prevent sticking as they cool and harden.
- Cool and Serve: Allow the pralines to cool and harden at room temperature for about 30 minutes. Once set, they are ready to enjoy or package as gifts.
