Enhanced with smoky BBQ sauce, tomato paste, and spices, this hearty main course is perfect for holidays or special occasions, delivering rich flavors and satisfying textures without any animal products.

Ingredients

Scale

Filling

  • 1 tablespoon olive oil
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked lentils
  • 1 cup cooked brown rice
  • 1 ½ cups vegan ground beef substitute
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste
  • ½ cup vegan BBQ sauce (plus extra for brushing and serving)
  • ½ cup breadcrumbs

Assembly

  • 1 sheet vegan puff pastry, thawed
  • Unsweetened plant-based milk for brushing
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat and prepare baking sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté aromatics: Heat olive oil in a skillet over medium heat. Add the finely chopped red onion and cook for 4 to 5 minutes until softened and translucent. Stir in the minced garlic and cook for an additional minute to release its aroma.
  3. Cook filling mixture: Add cooked lentils, cooked brown rice, vegan ground beef substitute, soy sauce, tomato paste, smoked paprika, ground cumin, salt, and pepper to the skillet. Stir well and cook for 5 to 7 minutes, stirring occasionally, until the mixture is heated through and flavors meld together.
  4. Incorporate BBQ sauce and breadcrumbs: Remove the skillet from heat and stir in the vegan BBQ sauce along with the breadcrumbs, which help bind the filling. Allow the filling to cool slightly before handling.
  5. Prepare the puff pastry: Lightly flour a clean surface and roll out the thawed vegan puff pastry into a rectangle large enough to encase the filling log.
  6. Assemble the Wellington: Spoon the cooled filling mixture into the center of the pastry, shaping it into a log. Carefully fold the pastry over the filling, sealing the edges completely to encase the filling.
  7. Prepare for baking: Place the assembled Wellington seam-side down on the lined baking sheet. Brush the top with unsweetened plant-based milk to help achieve a golden crust. Use a knife to lightly score the surface for decorative effect.
  8. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the puff pastry is golden brown, crisp, and fully cooked through.
  9. Rest and serve: Allow the Wellington to rest for 5 minutes after baking to let the filling set. Slice and garnish with fresh thyme if desired. Serve with additional vegan BBQ sauce on the side for dipping.

Notes

  • You can prepare the filling a day ahead to save time; assemble the Wellington just before baking.
  • For extra texture and flavor, add chopped mushrooms or walnuts to the filling mixture.
  • Ensure the puff pastry you select is vegan, as some brands include dairy or eggs.
