- 2 large eggs, lightly beaten

Instructions
- Prepare Vegetables: Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
- Mix Ingredients: In a bowl, combine zucchini, carrot, onion, parsley, and garlic. Add flour, eggs, Parmesan, salt, pepper, and paprika; mix well.
- Cook Fritters: Heat olive oil in a skillet. Scoop portions of the mixture into the skillet, flatten, and cook for 3–4 minutes per side.
- Finish and Serve: Drain cooked fritters on paper towels. Serve warm with dip.
