Ingredients
Scale
Cake
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup milk
Filling and Topping
- 1 can (21 oz) cherry pie filling
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- 8 oz white chocolate, shaved or grated
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter with sugar until the mixture is light and fluffy, which usually takes about 3-4 minutes.
- Add Eggs and Vanilla: Beat the eggs in one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract to flavor the batter.
- Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture alternately with milk, starting and ending with the flour mixture. Mix lightly just until combined to avoid overmixing.
- Bake the Cake: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and allow cakes to cool completely in the pans before removing.
- Prepare Whipped Cream: In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. This will be used as frosting and filling.
- Assemble the Cake: Place one cake layer on your serving plate. Spread a generous layer of whipped cream on top, then spoon half of the cherry pie filling evenly over the cream.
- Finish Assembly: Add the second cake layer on top. Cover it entirely with the remaining whipped cream and spread the remaining cherry pie filling on top in an even layer.
- Garnish: Decorate the top of the cake with white chocolate shavings for a beautiful and delicious finish.
Notes
- For best results, ensure that the butter and eggs are at room temperature before mixing to achieve a smooth batter.
- Allow the cakes to cool completely before assembling to prevent the whipped cream from melting.
- You can use fresh cherries with a little sugar and cornstarch as a substitute for canned cherry pie filling if desired.
- Refrigerate the assembled cake for at least 1 hour before serving to set the layers and flavors.
- White chocolate shavings can be made by carefully shaving a white chocolate bar using a vegetable peeler or grater.
