Description

This Zesty Coconut Lime Fish Soup is a flavorful and aromatic dish that combines tender white fish with the bright and tangy flavors of coconut, lime, and a hint of spice. It’s a Southeast Asian-inspired soup that is both comforting and refreshing.

Ingredients

Scale

White Fish:

  • 1 pound white fish fillets (such as cod, halibut, or snapper), cut into bite-sized pieces

Seasonings:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 can (14 ounces) coconut milk
  • 4 cups fish or vegetable broth
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • zest and juice of 2 limes
  • 1 tablespoon brown sugar
  • 12 small red chilies, thinly sliced (optional for heat)
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • salt and black pepper to taste
  • fresh cilantro, green onions, and lime wedges for garnish

Instructions

  1. Heat olive oil: In a large pot over medium heat, sauté onion until softened.
  2. Add aromatics: Stir in garlic and ginger until fragrant.
  3. Cook vegetables: Add bell pepper and cook until tender.
  4. Simmer: Pour in coconut milk and broth, add seasonings, and simmer for 10 minutes.
  5. Add fish: Place fish, tomatoes, and chilies in the pot and simmer until fish is cooked.
  6. Finish: Stir in spinach until wilted. Adjust seasoning and serve hot garnished with cilantro, green onions, and lime wedges.

Notes

  • For a creamier soup, use full-fat coconut milk; for a lighter option, choose light coconut milk.
  • You can swap spinach with kale or bok choy. Add noodles or rice for a heartier meal.
